Making a sweet Icelandic treat with kids | Iceland themed activities for kids

Kakósúpa or Cocoa Soup looks a lot like Hot Chocolate, although I’ve been assured it’s different. It’s very popular in Iceland and is perfect as a dessert, or as a way to warm up on a cold winter’s day.
The best thing is that it’s easy to make with kids!
Ingredients (for 4):
3 tablespoons cocoa powder
3 tablespoons sugar
1⁄2 teaspoon cinnamon
450ml water
700ml water
1 tablespoon cornstarch
salt, to taste
Instructions:
Mix together the cinnamon, cocoa and sugar in a saucepan.
Add the water, pouring it in slowly and stirring vigorously to remove all the lumps. It may help to sieve the cocoa first, to get rid of all the big lumps.
Bring the liquid to the boil and simmer for 5 minutes. You should be able to really smell the cinnamon.
Add the milk and bring it back to the boil. Be careful to watch this part carefully as you don’t want to leave the milk on too long. Simmer for 2 minutes but no longer.
Serve in a bowl or a mug. If you’re feeling very ‘Icelandic’ you can add a sprinkling of roasted oats, or eat with a rusk.
