Making a Welsh after school snack treat with kids | Wales themed activities for kids

Welsh Rarebit seems suspiciously like cheese on toast, but it’s a little more complex (and delicious) than that. The original name of the recipe was probably “Welsh Rabbit”, involving some kind of joke at the expense of the Welsh. It may not even be Welsh in origin.

But it has been enthusiastically adopted by the Welsh and is a perfect, easy recipe for an after school snack.


Ingredients (for 4):

  • 50g flour

  • 50g butter

  • 250ml beer or milk

  • 250g cheddar cheese, grated

  • 2 tsp English mustard

  • 2 tbsp Worcestershire sauce

  • black pepper

  • 4 slices of bread



Instructions:

  1. Preheat the grill.

  2. Melt the butter in a saucepan and stir in the flour. Cook over a low heat for 30 seconds, stirring constantly. Slowly add the beer or milk, making sure not to burn it. Simmer for 2 more minutes, stirring until the sauce is thick and smooth.

  3. Add the cheese, mustard and Worcestershire sauce, if using. Cook until the cheese melts, stirring the whole time. Season with freshly ground black pepper and set aside to cool.

  4. Place the bread on a tray lined with aluminium foil and toast until golden-brown. Spread the cheese sauce thickly over the bread and return to the grill for 30 seconds longer until browned and bubbling.
